Eating More Veggies

Here is a great way to get you and your kids to eat more vegetables... HIDE THEM!! No kidding. Researchers served familiar foods to 39 children aged 3-6 but with a catch: they modified the recipes. The foods - zucchini bread, pasta with tomato-based sauce and chicken noodle casserole - enhanced with broccoli, cauliflower, zucchini, tomatoes and squash. The vegetable substitutions lowered the calorie count of the foods. The kids rated "Yummy", "OK" or "Yucky" and 70% of them said "ok" or "yummy." I bet if they were given a side of steamed zucchini instead the vote would have been "YUCK." Mommies keep adding in those healthy foods.
