Spiced Pumpkin Chai
Nourishing and seasonal foods like pumpkin and nutmeg soothe the nervous system and help us stay warm. The yummy beverage also has a ton of beta-carotene. The nutrient is what makes pumpkins and carrots orange. Beta-carotene encourages healing, rejuvenation and regeneration of tissue in our bodies. It also purifies the blood and soothes the eyes. The spiced added to the drink light up the heaviness the pumpkin brings to the table and stimulates circulation. Enjoy this holiday treat!
1/2 c pumpkin canned or fresh
1 1/4 c almond milk - add more or less for desired thickness
1/8 t nutmeg
1/4 t ginger dried
1/8 t ground cloves
1/4 t cinnamon
2 T of honey -add more or less for desired taste
1 1/16 t salt
1. If you're using fresh pumpkin, bake the pumpkin at 350 degrees for one hour. Chop. Mix the pumpkin with the rest of the ingredients in a blender. Puree. Pour mixture into a saucepan and bring to a boil. Stir frequently, and serve it warm.
2. If you are using canned pumpkin, combine all ingredients into a saucepan and bring to a boil. Stir frequently, and serve it warm.
